Mascarpone iced zucchini cream

A recentte simplissime by Crème de CourteTte Très Froidi et rafraîcisante, Elle Est Idéale Pour Jours de Grosses Chaleurs. It may be scented with basil or coriander. Je l’ai servie nature pour profiter pleinement du délicieux parfum de la courgette et, étonnamment mon homme a adoré, lui qui n’aime pas la courgette !

For 4 individuals:

– 4 small zucchini
– 2 tablespoons mascarpone (about 80 g)
– salt, floor pepper

Peel a squash, grate it and squeeze the juice.

Prepare dinner them in a pot of boiling salted water for about quarter-hour.

Permit to chill fully and refrigerate for a minimum of 2 hours (perfect till the following day).

Put the zucchini within the blender with about 3 tablespoons of cooking water and the mascarpone.

Salt and pepper.

Combine till easy.

Pour into glass jars and provides a pepper mill spin.

Serve recent and luxuriate in!
